Chicken Raspberry Salad Wrap

Note: A meal in a wrap is as easy as it gets. Use multigrain tortillas or flat breads for added flavor and nutrition. Wrap your wrap in parchment paper or aluminum foil to keep it neat, and don't forget to teach your kids how to eat a wrap so they don't loose their lunch. This is a tart and tangy chicken salad that can be served on it’s own, over lettuce or in a wrap or pita pocket. This will make about 4 servings.

Dressing:
Ingredients
1 cup nonfat plain yogurt
1/2 cup fresh raspberries, rinsed and drained
1 tablespoon red wine vinegar
2 teaspoons sugar (or agave)

Directions:
In a blender combine all ingredients until smooth. Refrigerate dressing in a covered container for at least 1 hour before using.

Salad:
Ingredients:
2 cups cooked and cubed boneless, skinless chicken
3/4 cup red onion, finely chopped
1 cup celery, finely chopped
1 cup green bell pepper, diced
1/2 cup chopped almonds
4 cups fresh raspberries, rinsed, drained and divided

Directions
Combine the chicken with the onions celery, bell pepper and almonds and toss with the dressing until well combined.
Gently fold in the raspberries until well coated but not crushed.
Serve on its own or over lettuce or in a multigrain tortilla as a wrap.

Just wondering... do you have any easy breakfast and lunch ideas for kids?
I am soo burnt out on the same 'ol french toast for breakfast and pb&j for lunch....

Hey Amber-

I am with you on the breakfast and lunch doldrums! I have a few ideas for you:

-check back on monday for our oatmeal pancakes recipe. We are re-posting it.

-Check out the "Muffin Tin Monday" idea under our Ideas to Inspire category

-Also, under the recipes section, Kristen posted a good sweet potatoe pancake recipe that I love and that other lazy mamas will too. (I was not calling you lazy) :)

-We do a lot of brown rice and black bean bowls here for lunch. My kids love them with just a bit of cheese sprinkled over them.

-We also do quesadillas a lot (even with a bit of brown rice and black beans inside or with a little leftover chicken or taco meat inside), and I slice them up quick & easy with my pizza cutter.

-If I am on my "A" game, I will make up a big batch of whole wheat pasta with some marinara sauce and ground turkey or turkey meatballs and then freeze it in small containers. Then, I can just pop one of the containers into the fridge to defrost the night before.

-There is always the good old "Turn a Whole Wheat English Muffin Into a Personal Pizza" routine. If they get to help do this, they are in HEAVEN!
